Chicken and Pumpkin Pie

Sorry, there's been so little content from me lately my mental health hasn't been the best so there have been some med. changes and with med. changes come side effects. This has meant I haven't been spending quite enough time in the kitchen and that for the last we while I've slipped back into old habits but today I'm doing a bit better so today we are eating a bit better!
My husband has been a great support through this time but he works 12-14 hour days with a one hour commute each way so he's definitely not up to cooking if I'm struggling. Also as a warning the total cook time on this pie is over 4 hours so make sure to start your prep early enough.

Chicken and Pumpkin Pie
Serves 3-4

  • 500g pumpkin, peeled and cut into 1cm chunks
  • 1 apple, peeled and sliced
  • oil for frying
  • 1kg boneless pork shoulder
  • 50g butter (or ¼ cup oil)
  • 1 large onion, chopped
  • 6 cloves garlic, peeled and roughly chopped or 6tsp of the precrushed
  • 1 tbsp chopped fresh thyme leaves
  • 2 tsp fresh marjoram
  • ½ cup white wine
  • 1 cup chicken stock
  • 3 tsp mustard (I use whole mustard)
  • 1 ½ tbsp ish cornflour mixed with some stock or water
  • flaky puff pastry enough to make your pie (either whole pie, bottom and top or pot pie with just the top)
  • 1 free-range egg, beaten with 1 tbsp milk (is you want to glaze your pastry I feel it looks good but doesn't change the eating so I often don't bother)

  1. Preheat oven to 140 degrees
  2. Place pumpkin and apple in an oven proof casserole dish with a lid
  3. Chop pork into 1-2cm cube and fry in a large fry pan
  4. Remove pork and fry the onion
  5. Add the butter, garlic, thyme and marjoram and re-add the pork cook for 5-10 min
  6. Add white wine, chicken stock and mustard cook for 5 min
  7. Add cornflour and simmer for a further 30-45 min
  8. Carefully pour the contents of the frypan over the pork and apple and carefully give a stir
  9. Place the casserole dish with lid on in the oven for 2-3 hours
  10. On removing the dish from the oven give it a stir to break up the apple and pumpkin a bit 
  11. Turn the oven up to 200 degrees
  12. Grease a pie dish and line with pastry
  13. Pour in the filling and cover with pastry
  14. Cut steam holes(if you are glazing the pie brush with milk and egg mixture) and bake for 25-35 min until golden
